How to make Rainbow Fruit Tart – A simply brilliant Masterchef India recipe by Radhika Agarwal. I think Radhika Agarwal can be Masterchef India winner.
Fruit tart is an absolute delight for every child. Fruit Tart is basically a French dessert. Now- a -day fruits tarts are very popular. Tart is basically a bake dish filling over a crust pastry base. Radhika Agarwal also tried to relive her childhood through her recipe: Rainbow Fruit Tart. As she quoted, “Her mother never cooked this recipe perfectly, so she wants to surprise her mother by making it perfectly”. Her dish was flawless and liked by all. So we will also try to replicate her dish as perfectly as we can.
First we need to prepare the crust.
Short Crust Pastry:
Ingredients
All Purpose Flour – 1kg
Butter Cubes - 250 gms
Ice chilled water - small bowl
Salt – 10 gm
Sugar -10 gm
Pie plate
Seasoned fruits – according to your choice
Whipping Cream -100 ml
Chocolate ( melted )
Vanilla’s extract – 10 ml
Jam of your choice
Colored Candies for decoration
Rolling Pin
(* Measurements may vary according to size of Pastry Pie crust)
You can prepare it in bowl but ideal place to prepare pie crust is marble floor because it continues to hold the cool temperature of dough which is very important for Pie crust. You might have seen in show Radhika was also rolling her dough on marble work station.
Method:
First step starts with spreading flour on marble floor.
Add sugar and salt and mix it well.
Now the most important part is to add the butter into mixture. If you want flaky crust in your pastry then it is very important that butter must be in a solid form (that’s why we have mention butter cubes) .Do not use butter in diluted form.
Mix butter well into mixture and knead dough with ice chilled water. Try to use water in small amount as we need little dry dough.
Now sprinkle little dry flour on marble floor. Take a rolling pin put some dry flour on it.
Now roll your dough. If you rolling 8 inch dough always go at least 2 inches extra. While rolling make sure your dough should be separated from floor.
Now place this rolled dough on Pie plate. Remove any extra edges .Settle your dough properly on each corner of Pie plate. (Generally pie plate has curves on its edges)
Now bake it in pre-heated oven. Let it cool for a while.
Pastry crust is ready!!
Now Brush the cooled crust with melted chocolate and put aside. Fill this crust with whipping cream and Vanilla and fruits together. Heat the jam with a little water and use to brush the fruits. Chill until serving.
Presentation:
One of the reasons why Radhika’s pie crust was appreciated by all three judges was well decorated presentation. According to Judge Ajay Chopra he never seen such well decorated pie crust in 15 years of his chef Career. Radhika pie palates were smaller in size and I guess she used 5 or 6 pie crust and she arranged one pie crust and candies alternatively on plate.
